This is a compote usually made in the Winter months and we like some added to Porridge, cereals or even yogurt.
400g mixed fruit - your choice - I use apricots, figs, prunes and sultanas
Pop the fruit into a saucepan with a lid and add just enough boiling water to cover. Let them sit until the fruits start to plump up, then simmer for 20 minutes, or until the fruits are lovely and soft. Allow to cool and use as they are, or you can puree them in a liquidiser. These will keep for a week in an airtight jar.
I have on occasions added a spot of brandy or rum. (I also do this when I am planning to make a fruit cake - soak the fruit overnight)
If you buy pre-soaked (always a good bit more expensive) just cover the fruits in boiled slightly cooled water for 15 minutes.
