3 English muffins, split and toasted 4 oz. Canadian bacon cubed about 1 cup 1 bunch asparagus, blanched and cut into 2" pcs. 6 eggs 1 qt. whole milk 1 Tbs. whole grain Dijon mustard 1 tsp. chopped fresh tarragon 1 cup shredded sharp cheddar cheese
Heat oven to 350. Tear English muffins into small pcs., place in 13x9 baking dish. Sprinkle with bacon and asparagus. In large bowl whisk together eggs, milk, mustard and tarragon. Season with salt and pepper to taste. Pour over asparagus and English muffin mix. Top with cheese and bake 1 hr. 10 mins. or until eggs have set. This recipe appeared in Woman's World magagine recently. I made this for a brunch for my niece the day after her wedding. Even one of my sisters who does not like asparagus liked this. And it looks like a picture when it's done.
