We have this on high days and holidays
Serves 4
3lb Green lipped Mussels (soak for 1 hour in cold water with a tbsp of flour) the mussels eat the flour and gets rid of any sand. 16 fl oz Lager 2 onions chopped 5 garlic cloves roughly chopped 1 green chilli deseeded and thinly sliced (wear Rubber gloves) 6 ozs diced fresh tomatoes (you could use tinned) 2 - 3 tbsp chopped fresh coriander (cilantro) small tin of sweetcorn (optional) Crusty loaf of bread
Clean the mussels and pull of the beards. Discard mussels with broken shells and make sure the close on tapping, if not discard. Rinse the mussels under cold running water
Place the lager, onion, garlic, chilli slices and tomatoes in a large saucepan. If using sweetcorn add it now, bring up to the boil and add the mussels, then cover and cook over a medium heat for 10 minutes, or until the shells open. Discard any that don't open.
Ladle into individual bowls and sprinkle with coriander
Serve with your favourite crusty bread.
