Here is a recipe that everyone who has tried it has asked me for the recipe, it is simplicity itself: Lemon Drizzle Cake
makes a 1lb loaf Preheat oven to 180oC/350oF Grease and paper line a 1lb loaf tin (I use silicone these days, but I still line the bottom part with paper) Beat together for 2 minutes: 4 ozs butter 6 ozs SR (self-rising) flour 6 ozs sugar 2 eggs 4 tbls milk rind of l lemon
Spoon the mixture into loaf tin, Make a well in the centre and bake for 1 hour until golden and well risen. Loosen the edges from the tin. Mix juice of l lemon and 3 tbsp icing sugar (confectioners) together and spoon over the hot cake. Sprinkle with granulated sugar if you want a wonderfully crunchy topping. Leave in the tin until cold and cut into slices.

Sylvia: this has got to be the easiest recipe that I've gotten from you! When a group of 11 year old boys eat it all in one sitting you know you have a winner! Now my son's friends think I am sooo coool! I served it last night with a scoop of vanilla ice cream. Thank you so much. Sue in NC
