This is one recipe where the liquid measures have to be exact, my first try was flat and disappointing - the birds enjoyed them. I didn’t measure the banana properly.
Yoghurt and Banana Muffins
Preheat oven to 175oC/350oF. Grease muffin cups or line with paper liners. makes 10 muffins
1 cup plain flour 1 tbsp baking powder 1/2 tsp baking soda 1/4 tsp salt 1 cup mashed-up ripe banana 1/4 cup brown granulated sugar 1/4 cup plain yogurt 1 egg 1/2 tsp vanilla/almond extract
Mix together flour, baking powder, baking soda and salt. In a separate bowl, beat together banana, sugar, egg and vanilla/almond extract. Stir in the yogurt. Stir banana mixture into flour until just combined. I used my ¼ (quarter) cup measure to fill each muffin cup, sprinkle the tops with a little brown sugar Bake in preheated oven for 15 to 20 minutes, or until a toothpick inserted into centre of a muffin comes out clean. Cool before serving.
