1 Sheet of ready made puff pastry (approx 12” x9”) 1 8oz can Tuna in Brine drained 1 2” sweet pickled Gherkin (chopped) 1 small sized potato cooked and cooled (chopped into cubes)- optional 1 tbsp Mayonnaise 1 tsp tomato puree ½ tsp dried parsley Small packet plain crisps broken up, but not crushed
Grease a baking 12” x 9” approx sheet
Mix tuna flakes with all the ingredients ex crisps Arrange the filling along the centre of the pastry. Spread crisps across the top Cut the pastry into ½ inch strips at an angle, either side of the filling. Fold the pastry strips, alternately, over the mixture to look like a plait. Brush with beaten egg, sprinkle lightly with maldon sea salt and bake for 30-35 minutes.
