For some unknown reason the DH isn't into Asian or any type of stir-fried food. I love stir-fries and the veg comes out just right, neither too crisp or too soft.
Quick and easy green stir-fry with beef (enough for 4)
1 tbsp oil (sunflower or one that won't impart a flavour) 2 x 200g/8oz Sirloin steaks, trim any fat off and slice thinly 1 head of broccoli, cut into small florets 2 garlic cloves, thinly sliced 300g/10 oz sugar snap peas 4 spring onions (salad, green) thickly sliced diagonally 3 pak choi, leaves separated and cut into quarters 4 tbsp hoisin sauce
Heat a large wok or deep frying pan, add the oil then sizzle the steak strips for four minutes until nicely browned. Remove from the pan and set aside.
Toss the broccoli and garlic into the wok with a splash of water, fry briskly for five minutes or until the broccoli starts to soften. Add the peas, spring onion and pak choi stir and fry for another 2 or 3 minutes, then stir in the hoisin sauce and beef.
Heat through quickly, add a little water if it seems a little dry.
Serve with noodles or rice.
