Devilled Egg Salad For 4 people
4 eggs 3Tbls mayonnaise 1 - 2 tsps curry powder few drops Worcestershire Sauce 1 Tbls chutney or 1 Tbls chopped tiny onions used for drinks
Garnish: Lettuce or endive tomatoes Cucumber
*Hard boil the eggs, cut in half length-ways, remove the yolks while still warm, mash or sieve.
Blend with the rest of the ingredients, pile into the egg white cases.
Serve on a bed of the lettuce or endive, garnish with the tomatoes and cucumber.
*to hard boil eggs: Cook for approx 10 minutes in boiling salted water, immediately plunge into cold water and crack the shells. This prevents a dark line forming round the yolk
