I have multiplied this recipe on different occasions with great success. These quantities are enough for 2 side servings.
8 small carrots, sliced 1/4" thick 4 tbs butter 1 tbs fresh tarragon, chopped 10ml/2tsps balsamic vinegar 1/2 teaspoon honey pinch of sea salt
Boil the carrots in salted water until soft, about 1o minutes. Drain the carrots, Melt the butter in a saucepan, add the rest of the ingredients and stir together. Toss the carrots in the flavoured butter and serve hot.
