This is no ordinary sandwich. This club sandwich makes a filling snack for two. It can be made even more filling by adding crisps (chips) and a few pickles.
Crab Club Sandwich Recipe
4 ozs/100g Flaked Crab meat Butter (to spread) 3 Tbsp Mayonnaise 1 Tomato (sliced) 4 Small Crisp Lettuce Leaves Salt and Pepper 2" Inch Piece Cucumber (sliced)
Toast the bread on each side until golden. Spread each slice with butter.
In a bowl mix the crab meat, mayonnaise and salt and pepper to taste.
Cover the first slice of toast with 2 lettuce leaves, half the crab meat mix then the tomato slices.
Cover with the second slice of toast then add the remaining lettuce, crabmeat mix and cucumber slices.
Place the third slice of toast on top and press gently.
Cut the sandwich diagonally or into quarters, you can secure each piece with a tooth pick if necessary.
Serve with a wedge of lemon and water cress sprigs.
