Peas, Pork and Pimiento
1 pound pork -- cut in small cubes 2 tablespoons vegetable oil -- up to 3 salt and pepper 15 ounces tomato sauce 6 cloves garlic -- up to 8, diced 2 bay leaves 15 ounces green peas -- canned, drained or frozen 2 tablespoons pimiento -- about 2 generous T.
Heat oil to medium and brown the pork; salt and pepper to taste. Add tomato sauce, garlic and bay leaves and stir Lower the heat; cover and simmer on low for 1 1/2 hours. Remove lid and stir in the peas and pimiento. Heat all together for 5 - 10 minutes and serve over rice.
