Spaghetti with Clams
Serves 4
12 oz/350g Spaghetti* 1 onion, chopped 1 garlic clove, crushed 1 Tbsp olive oil 1/2 pint/300ml passata (sieved tomatoes) 11 oz/300g small tin baby clams, drained Salt and freshly ground pepper Chopped parsley
Cook the spaghetti in plenty of boiling, salted water for 10 minutes just until tender, drain. Meantime, sauté the onion and garlic in the oil for 3 minutes, stirring until soft, but not brown. Add the passata, clams and a little salt and pepper, simmer for 5 minutes. Add to the spaghetti and toss well. Garnish with parsley and serve with crusty bread.
*I like to half my spaghetti sticks before cooking, cuts down on laundry and it's easier to eat.
