This soup was thrown together by my son and we really enjoyed it. Have this soup with a few of your favourite sandwiches and you have a filling lunch.
Salmon Chowder in a hurry
Serves 4
1 pint/570mls milk med sized can sweet corn med sized can salmon 1 oz/25g butter Seasoning Chopped parsley
Put the milk and sweet corn into a pan. Bring almost to the boil. Add the flaked salmon, butter, seasoning and parsley. Heat gently for a few minutes and serve.

Hi Sue,
Although I know that Nicholas and Val like to cook and their Risottos and Pasta dishes are good - I had my doubts when he said he would make some chowder for us. I was pleasantly surprised not only by the taste of the chowder, but in how quickly he made it.
Glad Mindy liked it, she would be a god-send here. I've got so much smoked salmon left. There was only myself and one other who enjoyed and could eat smoked salmon. I had a whole side of smoked salmon - there is only so much smoked salmon two ladies can eat. We had it with lemon, we had it with mayonnaise, we had it with avocado and cucumber, melon etc. Even old Bert the delivery man couldn't be enticed.
Gina and family did take a lot away with them yesterday.
