No-Bake Bailey's Chocolate Cheesecake
9 oz/250g packet digestive biscuits, crushed 2 oz/50g unsalted butter, melted 7fl oz/200ml Bailey's Irish Cream 12oz/330g Full Fat Cream Cheese 2 oz/50g milk/plain chocolate (70% cocoa solids), melted 7 fl oz/200ml double cream
Stir together crushed biscuits and melted butter, use to line the base and sides of a 9"/23cm flan tin, pressing down with the back of a metal spoon. Chill.
Beat the cream cheese until soft, add the Baileys and beat until mixed with the cheese.
Meanwhile, melt the chocolate in a bowl over a saucepan of water (making sure that the pan does not touch the water).
Whip the cream until it forms soft peaks.
Pour the melted chocolate into the cheese mixture and stir until evenly mixed in.
Gently fold in the whipped cream.
Pour onto the biscuit base and chill overnight.
*Decorate with some piped whipped cream and chocolate coffee beans.
*Alternatively top with mandarin oranges from a tin
