I like making this loaf, it's really just a matter of assembling all the ingredients. No effort required and it tastes goooood.
Fruit and Nut Breakfast Loaf Preheat oven to 140oC/280oF
3 Weetabix*, crushed 6 oz/175g Demerara sugar 6 oz/175g mixed dried fruit 10 fl.oz/300ml milk 1 egg, beaten 7 oz/200g self-raising flour 2 oz/50g walnuts, chopped
Grease and line a 2 lb/900g loaf tin.
Place the crushed Weetabix, sugar and mixed fruit in a bowl. Add the milk, stir, cover and soak for 3-6 hours.
Add the egg, walnut and flour to the soaked mixture. Fold until thoroughly mixed. Spoon into the prepared tin and bake into the oven for 1 hour 15 to 1 hour 30 minutes. Serve on its own or spread with butter and jam.
Tip - Replace the walnuts with mixed chopped nuts.
