4 oz/115g chorizo sausage 2 Tbsp olive oil 4 leeks, thinly sliced 1/2 red pepper, deseeded and chopped 4 eggs salt and pepper
Slice the sausage. Heat the oil in a large frying pan. Add the leeks and cook over a medium heat, stirring occasionally, for 5 minutes, or until softened. Add the pepper and sausage slices and cook for 5 minutes.
Beat the eggs in a bowl and season to taste with salt and pepper. Pour the eggs into the frying pan and cook for a few seconds. Loosen any egg that has set at the edge of the pan with a palette knife and tilt the pan to let the uncooked egg run underneath. Continue cooking until the underside has set.
Remove the frying pan from the heat, place an upside-down plate on top and, holding the 2 together, invert the tortilla on to the place. Slide it back into the frying pan and cook for a further 2 minutes, until the second side has set. Slide the tortilla out of the frying pan and cut into wedges.
Serve with a salad.
