Hi,
im looking for an recipe for the New Zealand dessert pavlova ( not shure about the spelling :-)

Hello and welcome webmasterjim! We are all friendly here in Nancyland and all help each other. Pavlova is a meringue dessert and garnished with whipped cream and fresh fruit. Below is a recipe I just got in my Good Housekeeping magazine. I believe there is another one in this section and/or the dairy section of this message board, also. The Perfect Meringue Pavlova from www.goodhousekeeping.com1 tbl. cornstarch 2/3 c. plus 2 tbl. sugar (keep each separated) 4 large egg whites 1/4 tsp. salt 2 tsp. distilled white vinegar 1 tsp. vanilla extract 1 c. heavy or whipping cream 3 kiwifruit, peeled and each cut lengthwise into 8 wedges 1 lb. strawberries, hulled and each cut in half 1. Preheat oven to 250ºF. Line cookie sheet with foil. Grease foil and dust with flour. Using 9 inch round cake pan as guide, with toothpick, outline circle on foil. 2. In small bowl, combine cornstarch and 2/3 c. sugar 3. In large bowl, with mixer at med. speed, beat egg whites and salt until foamy. Beat in sugar mixture, 1 tbl. at a time, until mixture completely dissolves. Increase speed to high; beat until whites form stiff, glossy peaks. Beat in vinegar and vanilla. 4. Spoon meringue into circle on foil; spread to edge of circle, forming a "nest" with 2" high edge. 5. Bake meringue 2 hours. Turn off oven; leave meringue in oven 2 hrs. to dry. Remove from oven and cool completely on wire rack. 6. In small bowl, with mixer at med. speed, beat cream and remaining sugar to soft peaks. 7. Transfer meringue to plate; top with whipped cream and fruit.
