This is an easy and low-fat dessert. The basil works really well with peaches.
Warm Peaches with Basil and Honey
Serves 2
Knob of butter 1 ripe peach or nectarine, stoned and thickly sliced 1 Tbsp clear honey juice of 1/2 orange 4-5 fresh basil leaves, shredded Vanilla or white chocolate ice cream to serve
Melt the butter in a frying pan, add the peach or nectarine slices, then cook on both sides until slightly softened (about 3 minutes) Add the honey and stir to make a sauce, then pour in the orange juice and allow to bubble briefly. Stir in the basil and serve with scoops of ice cream.

Hi Sue, great to hear that you and yours are enjoying the peach dish. My GC Katy loves this with peaches, whereas the Taylor loves it made with nectarines. Do you ever get the chance of fresh peaches of the tree? mmmm
I have got 7 different varieties of basil starting in the aerogarden and am trying out different recipes for basil sugar, they've all looked nice - but I can't get the ratio of sugar right! I have used one lot for basil soda bread! Time and taste will tell!

I'm still in shock, I can't believe the cost of Paul Hollywood's bread book - £127 plus???
Back to basil - basil sugar is all about getting the quantities right. Basil leaves in your pestle a mortar and add sugar until you get the flavour you want. I tried it in my grinder, I tried it on a wooden board, tried it in the old fashioned pestle and mortar, but no, can't get the flavour I want, without losing the great greenery of the basil. I haven't tried it, but the basil sugar is supposed to be good with strawberry ice cream?
The 7 different basils are part of a kit that I bought from the aerogarden folks. I'll list them on the General board. It will be interesting to taste the differences.
