This is a bit on the pricey side, but you will get 8 substantial servings. I usually have a tin of condensed and evaporated milk in my cupboard, just waiting for occasions like this.
Slowcooker Caramel Rice Pudding
3 cups cooked white rice 1/2 cup dried cranberries, cherries, apricots or sultanas 1 tsp vanilla extract 1 x 14 oz/400g can condensed milk 1 x 13 oz/375g can evaporated milk 1 Tbs brown sugar 1 tsp cinnamon
Spray the inside of a 2 to 3.5 quart crockpot with cooking spray. (or grease with butter). Mix all the ingredients, except the sugar and cinnamon, into crockpot.
Cover and cook on LOW 3 to 4 hours or until liquid is absorbed. Stir pudding. Sprinkle pudding with sugar and cinnamon. Serve warm.
