Honey Butterscotch
1 lb clear liquid honey 1/2 lb butter 1/2 tsp salt Vanilla extract
Boil the honey, stirring all the time until it thickens and a tiny quantity dropped in water hardens instantly. Remove from heat and stir in melted butter, salt and vanilla extract.
Pour into a well-greased shallow tin and mark into small squares when almost set. Break up into squares when cold and (unless for immediate eating) wrap in greaseproof paper. Butterscotch becomes very sticky if exposed to the air.
