Authentic Yorkshire Parkin Preheat oven to 150oC/300oF 8 oz of flour 8 oz medium oatmeal 4 oz soft brown sugar 1/2 tsp dry ginger (I use more, depends on your tastes) 1 egg 8oz of treacle/molasses 4oz of lard 1/4 pint of milk 1/2 tsp bicarbonate of soda Mix together the flour, oatmeal and ginger . Then melt the sugar, lard and treacle and add a little of the milk and well beaten egg. Put the mixture into the flour and mix to stiff batter. Add the soda dissolved in rest of milk. Mix together quickly, pour in shallow tin 11" x 9" x 2" Bake 1 hour until firm in moderate oven.
