Vidalia Onion Casserole
6 - 7 Vidalia Onions 1 stick - 1/2 cup - margarine or butter Parmesan cheese Ritz crackers
Peel and slice onions into thin rings. Saute in margerine until done. Pour 1/2 of onions into a 1 1/2 qt. casserole; cover with Parmesan cheese, then crushed Ritz crackers. Repeat layers and bake uncovered in 325ºF oven until golden brown, about 30 minutes. Yield 7 servings
I unearthed my Vidalia Onion cookbook this morning. I don't know how old it is, but there is no copyright with it! I have looked and looked throughout for an onion casserole with gruyere cheese and there is none here, nor on the web site. It had to have been a special recipe someone tweaked!
