Fiesta Salsa
These quantities make 1 1/2 to 2 cups
15 cherry tomatoes, quartered 1/2 medium red onion, chopped 1/2 green jalapeno pepper, chopped 1/2 lime 1/3 cup tomato juice 1/2 tsp ground cumin Salt and pepper to taste 1 tsp fresh basil, torn
Try to chop the first three ingredients to approx the same sizes and combine them in a bowl. Add the fresh lime juice, tomato juice, cumin, salt and pepper to taste. Mix all the ingredients. Sprinkle the basil over the top of the salsa.
Serve with tortilla chips or toasted pitta triangles or strips.
