Top your burgers with this relish, really tasty with any combination, but my favourite is a lamb burger with this particular relish.
Sweet Onion Relish
3 Tbsp olive oil 4 red onions, peeled and finely sliced 6 Tbsp redcurrant jelly 2 Tbsp red wine vinegar
Heat the olive oil in a saucepan, then add the onions and cook gently for about 15 minutes until softened. Addd the redcurrant jelly, red wine vinegar and 3 Tbsp water. Cook for a further 15 minutes, stirring occasionally until the onions are sticky and glossy. Season to taste, leave to cool.
