This pizza, could be a snack, appetiser or part of a main meal served with chips (french fries), or a baked potato and salad.
Mozzarella, Tomato & Courgette Scone Pizza
Preheat oven to 180oC/350oF
Serves 4 as part of a main meal
8 oz/225g self-raising flour 1 Tbsp baking powder 1 3/4 oz/50g margarine, plus extra for greasing 1 3/4 oz cheddar cheese, grated 1 medium egg 4 fl oz/125mls milk 3 medium sized tomatoes 1 x 125g pack of mozzarella, drained 1 courgette
Sieve flour and baking powder into a large bowl. Cube margarine and add. Rub in until mixture resembles breadcrumbs. Add the cheddar.
Break the egg into a measuring jug, add the milk to bring the measurement to 1/4 pt/150 mls and beat together. Add to the flour and mix to a smooth dough. Roll out on a floured work surface to about a 9"/23cm circle. Place on a lightly greased baking tray, or a pizza tray.
Slice tomatoes and mozzarella. Slice the courgette thinly with a peeler. Layer over pizza base.
Cook for 20 - 25 minutes until golden and risen.
Cut into slices and serve with salad.

Yey! I like eating pizzas. I'll recommend this recipe to my dad for him to cook for us. We will surely like the taste of this specially if topped with more cheese.

You are right about adding more cheese, as my grand daughter Katy says - there's never too much cheese.
