Rice with Chorizo
Serves: 4 1 medium onion, chopped 1 Tbsp vegetable oil 3 1/2 ozs chorizo sausage, cut up 2 cloves garlic, minced 3/4 cup uncooked long-grain white rice (Basmati if you have it) 1 3/4 cups chicken Broth 1/2 cup chunky Salsa 1/2 cup frozen peas Chopped fresh coriander (cilantro)
Heat oil in a 10-inch frying pan over medium-high heat. Add sausage, onion and garlic and cook until vegetables are tender, stirring frequently.
Stir in rice, broth and salsa. Heat to a boil. Reduce heat to low. Cover and cook for 15 minutes. Stir in peas and cook, covered, 5 minutes or until thoroughly cooked. Stir in coriander (cilantro).
