This is a good way of using up all those pumpkin seeds at Halloween. Don't bin them.
Spiced Pumpkin Seeds
Pre-heat the over to 180oC or if fan assisted 160oC
Remove the seeds from the pumpkin, discard any pulp or stringy bits, wash well in warm water.
Spread the seeds in a single layer on a baking tray and season generously with salt and a good sprinkling of chilli powder.
Place in the oven for about 20 minutes until the outside of the seeds are crunchy and the inside dry. Leave to cool.
Enjoy as a snack, as a nibble with drinks, or scattered over salads or risottos.
