We call these biscuits, they may be classed as cookies in some parts of the world. Cookies are sponge type cakes in Scotland. Whether you call them biscuits or cookies, there's not getting away from the fact that they are really good.
Ladies' Kisses Preheat oven to 180C/350F Baking time 12 minutes (fan assisted)
Makes 10
For the biscuits:
3 1/2 oz/100g Butter, softened 3 1/2 oz/100g caster sugar 3 1/2 oz/100g ground Almonds 3 1/2 oz100g Flour
Chocolate butter filling:
1 1/2 oz/50g plain Chocolate, broken into pieces 1/2 oz/20g Butter
Beat the butter and sugar together. Work in the ground almonds and flour until the mixture forms a stiff dough. Break off 20 pieces the size of walnuts and form into balls. Arrange on baking sheets, leaving a little room between each one. Bake in a preheated oven for 12 minutes, then transfer to a wire rack to cool. Meanwhile melt the chocolate in a bowl set over a saucepan of gently simmering water (or microwave on full power for 1-2 mins, stirring halfway through). Remove from the heat, stir in the butter and leave to cool. When the biscuits are cool, use the chocolate butter to sandwich them together.
