When making scones (biscuits) after cutting out your shapes, place them on your prepared baking tray by tipping them over so that the board side is uppermost, gives a better finish. If you want nice soft scones - after removing from the oven cover with a clean cloth whilst cooling. Whereas if you like a crispy top leave to cool uncovered.
