1 tsp. grated lime rind 1/2 tsp. orange rind 3 tbsp. lime juice 1 tbsp. tequila 2 tsp. sugar 2 tsp. vegetable oil 1 garlic clove, crushed 1/2 tsp. salt 4 (4 oz.) salmon fillets 1/2 lb. angel hair pasta, cooked (keep warm) cooking spray
Combine lime rind and next 7 ingredients in a large zip-lock bag; add salmon to bag. Seal and marinate in refrigerator for 20 minutes. Remove fish from marinade, reserving marinade. Heat grill to medium-high or preheat broiler. Place fish on grill coated with vegetable spray; grill or broil 7 minutes, basting frequently with reserved marinade. Serve over angel hair pasta. Serves 4 (1 fillet and 1/2 cup pasta)
