Farmer Brown’s “Spice of Life” Walleye
1 1 / 2 pounds walleye, cut approximately into 1 inch thick pieces
1 onion sliced
Juice of 1 lemon
1 cup dry white wine – preferably Mon Ami’s Walleye White
2 Tablespoons canola or olive oil
1 / 3 cup tarragon vinegar
1 1 / 2 teaspoons Worcestershire sauce
1 bay leaf
Ground pepper to taste
Italian (flat leaf) parsley, chopped
3 Tablespoons Farmer Brown’s “Spice of Life” mix Or
The following mixture:
1 teaspoon of each: paprika, onion salt, ground oregano, and salt.
Rinse fish and pat dry. In a shallow pan combine: oil, tarragon vinegar, white wine, Worcestershire sauce, ground pepper, bay leaf and parsley. Add fish and coat both sides. Cover with plastic wrap and refrigerate overnight.
Place fish on top of foil that has been made into a pouch and rub with Farmer Browns” Spice of Life” mix. Drizzle with lemon juice top with sliced onions and seal foil pouch. Bake approximately 10-12, minutes. Serve with rice and green vegetables. Serves 6
