Ceviche 3 pounds of fish fillets (trout or redfish), cubed 2 cups fresh lime juice 4 cups tomatoes, chopped 2 cups onion, chopped 1 cup cilantro, chopped 1 jalapeño, chopped 1 cup avocados, chopped Salt to taste Place fish in a shallow glass pan and cover fish entirely in limejuice. Cover pan with plastic wrap. Marinate in refrigerator overnight, about 12 hours. Drain and discard marinade. In a large bowl, combine fish and the remaining ingredients. Serve immediately.
