Blueberry Muffins In a medium bowl combine and make a well:
3/4 cup sugar 2 teaspoons baking powder 2 cups flour
In another bowl or large glass measuring bowl combine:
1/2 cup milk 2 eggs 1 teaspon vanilla 1/2 cup margarine, melted and cooled
Combine the two - adding the wet to the dry ingredients. Still just to almost moisten. Then add: 2 cups FRESH blueberries.
Fill well greased muffins cups 2/3 full. Bake @ 375 for 20-25 minutes. Makes about 16 medium sized muffins. You can freeze them.
When done, I usually dump out onto my "blueberry stained" dish towel and wrap up to keep warm. But I warn you, these will stain your towel. They are bursting with blueberries.
