Strawberry Walnut Bread Prep time: 14 min Baking time: 70 min
Ingredients: 3 c flour 2 c sugar 1 1/2 Tbs cinnamon 1 1/2 tsp baking soda 1 tsp salt 4 eggs 1 1/4 c vegetable oil 1 (10 oz) pkg frozen sliced sweetened strwberried thawed 1 1/4 c chopped walnuts
Directions: 1) Preheat oven to 350 deg F. Grease and flour two 9x5 inch loaf pans. 2) Combine flour, sugar, cinnamon, baking soda and salt in a large bowl and mix well. 3) Whisk eggs in a small bowl until blended. Add the eggs and oil to the flour mixture and stir just until blended. Fold in undrained strawberries and walnuts. 4) Spoon equal portions of the batter into the prepared loaf pans. Bake until a toothpick inserted in center of loaves comes out clean, about 70 min. 5) Cool loaves in pans for 5 -10 min. Remove to a wire rack to cool completely.
Variation: For mini bread loaves, bake in four 5x3 inch loaf pans until the loaves test done, about 45-50 min.
