Southern Crackling Cornbread Serves 15
Ingredients
4 cups of cornmeal (yellow or white) 2 teaspoons of baking soda 1-1/2 teaspoons salt 4 eggs, beaten 4 cups buttermilk 1/3 cup of bacon drippings 1 cup of pork cracklings
Directions Combine cornmeal, soda, and salt; stir in eggs and buttermilk. Heat bacon drippings in a 13x9x2-inch baking pan until very hot. Add drippings and crackling to batter, mixing well. Pour the batter into hot pan and bake at 450°F. for 25 minutes or until the bread is golden. Cut into squares. ;D
