Low-Fat, Low-Cal, and low- sodium
Bluebarry Apple Bread
*Means Notes
makes 12 serving
1 loaf
1-1/2 Cups flour
1- 1/2 tsp. baking powder
1/4 tsp. cinnamon
1/2 tsp. baking soda
1-1/2 cups peeled and diced apples
3/4 cup sugar *
2 Tbsp. Melted Butter*
1/4 cup Colesterol-free egg product*
1 cup frozen blue berries
1/2 cup Chopped Walnuts (Optional)*
Mix flour, baking powder, cinnamon and baking soda; set aside.
mix Apples, Sugar and butter(if using soy milk add it here in place of butter) in large bowl.
add egg; mix well.
add flour mixture; stir just until moistend. (batter well be thick)
gently stir in Blue Berries.
Spread batter into 8x4-inch loaf pan
Bake at 350 for 1 hour or until when toothpick inserted in center . comes out clean
let stand in pan 10 minutes. remove from pan. cool on wire rack
Colories 140, total fat 2.5g, sodium 140mg, carohydrate 28g,
*Notes
*you can use sugar sub. such as splenda,Equle. just use less because sweetener tend to be sweeter by the spoonful then reg. sugar.
* I used silk Vanilla Soy Milk In placse of butter
* I used 1 whole egg
* I left the nut's out Because I am watching my fat intake.
I made this bread lastnight with the changes in the notes above.
The bread was moist and full of good flavor.
My husband who is very picky about his food, and won't eat anything soy or diet, took a bite befor I could tell him that it was diet. He relly did enjoyed it.
When he reached for another slice, I told him that it was diet and that it had soy in it. He told me, (with a Smile) I was not telling him the truth. that it was to good to be diet.
I hope that who ever trys this recipe enjoys it as much as my husband did. he took some to work with him this morring.
I had some with my coffee this morring, and it is good.
