Low-Fat Deviled Eggs
1 dz hard boiled eggs (discard yolks) 1 pkg egg substitute (8 oz) 1/8 t celery salt 1 - 2 T sweet pickle relish (Optional) 1 - 2 T mustard 1/4 c fat free mayonnaise or salad dressing
In a non-stick skillet, cook egg substitute until set. When egg is completely cooled, chop or dice and place in a mixing bowl. Add remaining ingredients, mix well and fill egg whites. Sprinkle with paprika and refrigerate until ready to use. Makes 12 servings.
Nutritional information: 54 calories, 2 g fat, 6 g protein, 3 g carbohydrates, trace cholesterol, 183 mg sodium, no fiber.
