These are 2 of my favorite WW recipes, I've lost 22 lbs. and feel GREAT!!
Beef and Veggie Burgers
1lb. lean gr. beef (less 10% fat) 2 med zucchini shredded 1 onion finely chopped 1/4 teas. bl. pepper 3 pita pockets, whole wheat lettuce and tomato slices
Combine beef, zucchini, onion and pepper. mix well and shape into 6 patties. Broil or grill till done. Cut pita pockets in half 1 burger per half of pita, garnish as desired. 4 pts/burger
Couscous and Black bean Salad
1 c water 2/3 c uncooked couscous 1 c drained canned black beans 1 c chopped red pepper 1/4 c chopped gr. pepper 2 tables fresh chopped parsley 1/4 c orange juice 1 tables. red wine vinegar 1 1/2 teas. vegetable oil 1/4 teas. gr. cumin
Boil water in small saucepan. stir in couscous, remove from heat and let stand 5 min. fluff with fork, let cool slightly. Combine couscous, beans and next 4 ingred. in a bowl tossing well. Combine orange juice, vinegar, oil and cumin, stir well. pour dressing over couscous mixture tossing well. Cover and chill. 1 serving is 2 cups for 6 WW points.
