Hi everyone! I see that there are a few newbies that have joined this section of the board. Nice to see the list growing. Haven't seen a lot of action the last few days..... thought I'd send in a couple of "reid"cipes today. Hope you enjoy
Egg Muffins (4 WW Points)
Recipe By :Prevention Magazine Serving Size : 6 Preparation Time :0:00
4 Ounces sausage meat 1/4 Cup Chopped Green Bell Pepper 1/4 Cup Chopped Onion 1 Cup Liquid Egg Substitute -- or 4 egg whites 1 Large Egg 4 Ounces Sliced Mushroom 2 Ounces cheddar cheese, lowfat -- Shredded (1/2 cup)
Coat a 6-cup muffin pan with cooking spray. Preheat the oven to 350°.<br> In a medium nonstick skilelt over medium-high heat, cook the sausage, pepper and onion for 5 minutes, or until the sausage is browned. Spoon the mixture into a bowl, and cool slightly. Stir in the egg substitute, egg and mushrooms. Spoon the mixture evenly into the prepared muffin pan. Sprinkle with the cheese.
Bake for 20 minutes, or until the egg is set.
