Serves 4
12 Ozs Spinach -- small leaf 1/4 cup orange juice 3 tablespoons seasoned rice vinegar 1 tablespoon canola oil 1/2 teaspoon orange zest -- grated 3 dashes Worcestershire sauce 1 pinch pepper 1 tablespoon bacon bits -- real 1 orange -- peeled and sectioned
Thoroughly rinse spinach in cold water; remove stems and place in large salad bowl. To prepare dressing, combine orange juice, vinegar, oil, zest, Worcestershire, salt and pepper. Heat dressing until it just starts to boil. Toss spinach with hot dressing and bacon bits. Garnish with orange sections.
