Diabetic, Low-Fat Steak With Tarragon-Mustard Sauce 1 pound sirloin steak 1/2 teaspoon salt 1/4 teaspoon pepper 1/3 cup white wine 1 1/2 teaspoons sugar 1 1/2 tablespoons country-style Dijon mustard 1/3 cup reduced-fat sour cream 2 teaspoons fresh tarragon, chopped Sprinkle steak with salt and pepper. Heat nonstick skillet over medium-high. Cook steak 5 to 7 minutes on each side, depending on thickness of steak and desired degree of doneness (it will continue to cook as it rests.) Remove steak from pan and let rest covered loosely with foil or plastic wrap. Add wine, sugar and mustard to skillet and stir for 1 to 2 minutes, or until somewhat thickened. Remove from heat and stir in sour cream and tarragon. Cut sirloin across on the diagonal into thin strips. Fan strips on 4 dinner plates and spoon the sauce over meat. Makes 4 servings.
