Pork and Deer Sausage 1 3/4 pounds deer meat -- ground 1 3/4 pounds ground pork -- (be sure it's fatty) 1 tablespoon salt 1 teaspoon red cayenne pepper 1/8 teaspoon garlic powder 1 teaspoon cumin 1 teaspoon poultry seasoning 1/8 teaspoon sage 1/8 teaspoon curry powder 1 teaspoon dried mint Mix all of the ingredients well and make into patties. Be sure you don't mix more than 3 ½ pounds at a time with this particular recipe. NOTE: It's a good idea to grind the pork and venison together. Grind twice.
