Rattlesnake Fry-up (serves 4) 1 pound Snake meat, boneless, skinless and cut into 2 inch pieces 1 cup corn oil 1 cup flour 1/2 cup cracker meal Salt, pepper and garlic to taste 1 cup milk 1 medium size onion peeled Sauce: 1 tablespoon fresh chopped garlic 1 stick butter 1 tablespoon lemon juice 1 teaspoon sugar 1/4 cup chopped parsley Skin your rattlesnake, remove the entrails. Mix the flour and cracker meal with salt, pepper and garlic. Dredge meat in the flour mix, then the milk and flour mix again. Heat skillet with the oil until it is hot---350 degrees F. Place the snake meat and half of the onions in the oil and fry a few pieces at a time keep the temperature HOT! Drain on paper, then put on a plate. Repeat until done and re-use the onions. Sauce: heat butter in a pan on medium heat until it sizzles and pops, add the garlic and cook one minute, add the lemon juice, salt, pepper and parsley, stir to mix everything together and then pour over the fried rattlesnake and enjoy
