Honey Orange Duck 2 large or 4 small ducks 2 oranges, peeled and sliced thin 1 cup of honey 1/2 cup of lemon juice 1 tablespoon of brandy (opt.) 1/2 teaspoon of powdered ginger 1/2 teaspoon of salt Salt and pepper 1 stick butter or margarine 1/4 cup of brown sugar 2 teaspoons of orange peel, grated 1 tablespoon of prepared mustard 1/2 teaspoon of pepper Wipe the ducks inside and out; sprinkle cavity with salt and pepper. Divide sliced oranges and fill each cavity. Place breast down in roaster. Coat liberally with butter. Mix the remaining ingredients and pour over ducks. Cover and roast at 325ºF. for 1 hour. Turn ducks, breast side up, and baste with honey mixture. Cover and roast 30 minutes more. Remove cover. Baste again and roast 30 minutes more. Serve with pan juices poured over.
