This comfort dinner of hearty pot roast only takes minutes to put together. While it's baking, prepare your favorite side dishes for a well-rounded meal.
Prep Time: 10 minutes Baking Time: 2 1/2-3 hours Makes 8 Servings
Ingredients 1 1/2 cups frozen pearl onions (from a 10-ounce package) 1 boneless beef chuck roast (2 1/2-3 pounds) 1 cup beef broth 1/4 cup all-purpose flour 1/4 cup chopped fresh parsley 1 package (1 ounce) French onion soup mix
Directions 1. Preheat oven to 350F. Place pearl onions in a 5-quart oval roasting pan. 2. Place beef on top of onions. Combine beef broth, flour, parsley and soup mix in a large measuring cup or small bowl; mix well. Pour over beef in pan.
3. Cover pan and bake until beef is fork-tender, 2 1/2-3 hours. Remove beef from pan. Slice crosswise into 8 portions and place on serving plates. Spoon pan juices and onions over each serving.

Village Tips * Pearl onions are small white onions about the size of large marbles. They have a mild, sweet flavor.
* For easy cleanup, look for special roasting bags in the "bags and wraps" section of your supermarket; all the ingredients can be placed in the bag, then in the roasting pan. No messy roasting pan later!
