Old Fashioned Baked Meat Loaf
Serves 6
1 pound lean ground beef (ground round steak)
1 to 2 tablespoons horseradish
2 tablespoons catsup
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup half and half or low-fat milk (your choice)
1/2 medium onion, finely chopped
3 to 6 cloves garlic, finely chopped
1 teaspoon Italian seasonings
1 cup broken up crackers + 1/4 cup cracker crumbs
1/2 cup water, beef or vegetable stock
Preheat oven to 350 degrees. Combine ground meat,
horseradish, catsup, salt, pepper and Half-and-Half
or milk in a bowl. Finely chop onion and garlic. Add
to the meat mixture along with the seasonings and
the broken-up crackers. Mold the mixture into a loaf
shape in a shallow baking pan and sprinkle it with
the chopped cracker crumbs. Pour in the water or
stock. Bake for about 1 hour, adding more liquid,
if necessary. Garnish with chopped parsley and
sliced tomatoes. (This also makes good meatballs
by simply shaping them and sauteing them in a
skillet with some olive oil).
