During the depression years old railroad diners were salvaged and used as restaurants. Here is a recipe derived from a diner here in town. It is my favorite. 1-1/2 lbs hamburger 1 30 1/2 oz Brooks Chili beans 2 medium or 1 large onion chopped 1 tsp. salt 1 tsp red hot pepper flakes 2 Tbs. chili powder 1 15 oz can tomato sauce 1 15-oz can of diced tomatoes (optional) 4 to 8 z water to thin. (not too much)
Put hamburger in large kettle with a little oil and cook over medium heat. Chop hamburger while cooking. Make sure you chop it finely Cook until pink disappears. Add balance of ingredients and cook covered for about 1 to 1-1/2 hours. Can substitute kidney for beans for chili beans if necessary.
