1 1/2 c. frozen loose pack hash brown potatoes 1 beaten egg 3/4 c. tomato sauce 3/4 c. soft bread crumbs (1 slice) 1 T. Italian Seasoning mix 3/4 t. salt dash pepper 1 lb. ground beef
Preheat oven to 375°. Spread potatoes on paper towels; let stand 5 min. In lg. bowl, combine egg, 1/4 c. tomato sauce, bread crumbs, Italian seasoning, salt and pepper. Add ground beef; mix well. Fold in hash brown potatoes. Divide into 8 portions; shape into balls. Place one in each of eight 2 1/2" muffin pans. Bake for 20 min. Top each with some of the remaining tomato sauce. Bake 5 to 10 min. more. Makes 4 servings.
