Meat Loaf with Sweet Potatoes
3 large sweet potatoes Boiling water 1 tablespoon oil 1 pound lean ground beef 1 cup dry breadcrumbs 1/2 cup sliced green onions 1/2 cup chopped celery 2 tablespoons Worcestershire sauce 2 tablespoons catsup 1 egg 1 clove garlic, minced 1 teaspoon salt
Cut 2 unpeeled sweet potatoes in chunks. Peel remaining sweet potatoes; trim to 5-inch length by 1 1/2-inch diameter. Parboil all 10 minutes in boiling water to cover; drain; set whole potatoes aside. Toss chunks in oil; set aside.
In medium bowl mix remaining ingredients, until well blended. Turn out onto waxed paper; form meat mixture into 8x6-inch rectangle. Place whole potatoes across center; roll up from narrow end. Press ends and seam to seal. Place in shallow baking pan. Arrange cut potatoes around meat.
Bake in preheated 400-degree oven 30 to 35 minutes, turning potatoes occasionally until meat is browned and potatoes are tender.
Makes 4 servings.
