Hello again! Well, this evening, I was able to accomplish the right texture of peanut brittle, using a recipe that had 2 ingredients (sugar and peanuts) from The New Settlement Cookbook. It was the easiest recipe ever. No candy thermometer was needed either. Here's my question: I want the flavors of butter, vanilla, a little cinnamon, and what baking soda does to the brittle to be in my recipe. I'm not sure how to get this to happen. Have any of you ever made brittle or heard of anyone making it where it did not harden? I mean, it should be that I can make brittle w/added flavors and still have it come out hard. I'm sorry to go on about this. I just want a recipe that seems so easy to come out RIGHT

Okay, now that you all think I'm nuts (LOL, making peanut brittle and I'm nuts ), I'm here to say that I tried the recipe one last time w/the vanilla, margarine, cinnamon and baking soda, and it came out FINE. ;D I think it had to do w/how long I cooked it, and the kind of pan I used this time. I'm also going to get a candy thermometer off Ebay so I don't have to wonder about the temps anymore. Thanks for listening to me ramble!
